Healthy Chickpea Dessert
So I’m at the gym, watching the Food Network (as always), and a commercial comes on for an oatmeal cream pie. Those things used to be my FAVORITE. Now I’m exercising, and all I can think about is eating an oatmeal cookie. Not cool.
I stopped by the grocery store on my way home. Instead of grabbing the box of Little Debbies, I grabbed a couple cans of chickpeas. Yup, you heard right. Chickpeas.
One of my dessert staples for the past couple years has been chickpea cookie dough dip. It sounds super weird, but it’s just like a sweet version of hummus. Add in the right toppings, and it’s the perfect sweet treat!
The recipe is very nonspecific and quite forgiving. I usually just throw ingredients in and try it as I go.
The dip can be eaten straight with a spoon, or you can dip it with graham crackers. Perfect either way!
Cookie Dough Dip
1 can chickpeas, drained and rinsed
3 Tbsp rolled oats
1/4 cup peanut butter
1 tsp vanilla
1 Tbsp milk
1-1/2 Tbsp brown sugar
pinch of salt
For chocolate chip cookie dough: 1/2 cup dark chocolate chips
For oatmeal raisin cookie dough: 1/2 cup raisins + 1 tsp cinnamon + 1 additional Tbsp rolled oats
For white chocolate macadamia cookie dough: 1/4 cup chopped macadamia nuts + 1/4 cup white chocolate chips
- Place all ingredients (except chips/raisins/nuts) in a food processor and pulse until smooth. Scrape down the sides with a spatula and pulse again.
- Use the spatula to mix in the toppings and it’s ready to serve!
- Store cookie dough in an airtight container in the refrigerator.
