I’m currently in the home stretch of my masters program and dietetic internship. Life is bonkers! I’m always in need of a legit breakfast to power me through the day. Enter: a big, creamy bowl of oatmeal (usually with a healthy scoop of nut butter on top). Now, I’m very particular about my oatmeal. Just say “no” to sticky, clumpy oatmeal. Instead, make this healthy helping of the perfect oatmeal.
The Perfect Bowl of Creamy Oatmeal
1/2 cup rolled oats
1 cup water
1 cup milk of choice
Mix-ins of choice (sweetener, cinnamon, vanilla, chocolate chips, nut butter, nuts, dried fruit, berries…etc.)
Combine oats, water, and milk in a medium saucepan and bring to a boil. Once boiling, reduce heat and allow oat mixture to simmer. Stir occasionally. Continue to cook until oatmeal reaches desired consistency. Remove from heat and stir in desired flavors.
Note: There is a lot of liquid that needs to cook down, so this does take awhile! If necessary, you can make this the night before and let cool in the fridge. In the morning, add a little extra milk and microwave for 1-2 minutes, stirring halfway through.
