  1. In a large pan over medium heat, add oil, jalapeno, and onion. Cook until soft and translucent. Add garlic and continue to cook until fragrant, about 1 minute. Add cumin, paprika, and tomatoes. Stir to combine. Reduce heat to medium-low and simmer about 15 minutes, until sauce thickens.
  2. Once sauce has thickened, use a spatula to create 4 wells. In each well, add 1 egg white and 1 whole egg. Continue to cook until egg has set. You can cover the pan if you want the eggs cooked more. Sprinkle with parsley and serve with bread.
